More than 10 billion crayfish are being raised right on agricultural fields in China. A paradox that many European countries find almost impossible to accept because this small crustacean is precisely the culprit that hollows out rice field banks from below, destroys irrigation systems, eats native fish eggs, and can collapse an entire freshwater ecosystem within just a few breeding seasons.
