Kochi has been incredibly hot lately, so we start by watering the bricks, so the heat doesn’t bother you. Meanwhile our chefs start their prep for the day. By 4:30, plants are watered, and our staff are ready for the day. It is also the time for a daily meeting, where we discuss our plan for the day, individual assessment,
