Okay wait. Do you know what happens in Urban Forest before service? Before the lights.. Before the tables fill up? It’s this. Our first staff opens the cafe at 3:30pm. Kochi has been incredibly hot lately, so we start by watering the bricks, so the heat doesn’t bother you. Meanwhile our chefs start their prep for the day. By 4:30, plants are watered, and our staff are ready for the day. It is also the time for a daily meeting, where we discuss our plan for the day, individual assessment,
